Ingredients:
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 1/2 teaspoons ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1 1/2 cups granulated sugar
- 1 cup vegetable oil
- 3 large eggs
- 1 teaspoon vanilla extract
- 2 cups grated carrots
- 1 cup chopped walnuts
- Cream cheese frosting (recipe below)
Directions:
- Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan.
- In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt.
- In a large bowl, beat together the sugar, oil, eggs, and vanilla until well combined.
- Gradually stir in the dry ingredients until just combined.
- Fold in the grated carrots and chopped walnuts.
- Pour the batter into the prepared pan and bake for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
- Prepare the cream cheese frosting (recipe below) and spread it evenly over the top of the cake.

Cream Cheese Frosting:
- 8 ounces cream cheese, softened
- 1/2 cup unsalted butter, softened
- 3 cups powdered sugar
- 1 teaspoon vanilla extract
Directions:
- In a large bowl, beat together the cream cheese and butter until creamy.
- Gradually stir in the powdered sugar and vanilla until well combined.
- Beat until the frosting is light and fluffy.
- Use immediately to frost the cooled carrot cake.
