Carrot Cake with Cream Cheese Frosting

Carrot cake is a classic dessert that’s perfect for any occasion. This recipe for a moist and delicious carrot cake is sure to impress your friends and family.

Ingredients:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 1/2 cups granulated sugar
  • 1 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups grated carrots
  • 1 cup chopped walnuts
  • Cream cheese frosting (recipe below)

Directions:

  1. Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt.
  3. In a large bowl, beat together the sugar, oil, eggs, and vanilla until well combined.
  4. Gradually stir in the dry ingredients until just combined.
  5. Fold in the grated carrots and chopped walnuts.
  6. Pour the batter into the prepared pan and bake for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  7. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  8. Prepare the cream cheese frosting (recipe below) and spread it evenly over the top of the cake.
  9. Serve and enjoy!

Cream Cheese Frosting:

  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract

Directions:

  1. In a large bowl, beat together the cream cheese and butter until creamy.
  2. Gradually stir in the powdered sugar and vanilla until well combined.
  3. Beat until the frosting is light and fluffy.
  4. Use immediately to frost the cooled carrot cake.
