Ingredients:
- 4 eggs
- 1/4 cup olive oil
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon garlic powder
- 1/4 teaspoon dried oregano
- 1/4 teaspoon dried basil
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 1/2 cup shredded mozzarella cheese
- 1/2 cup chopped fresh spinach
- 1/2 cup chopped cherry tomatoes
Instructions:
- Preheat oven to 190 degrees C (375 degrees F).
- In a bowl, whisk together eggs, olive oil, Parmesan cheese, garlic powder, oregano, basil, black pepper, and salt. Set aside.
- Grease a 9-inch pie plate with butter or cooking spray.
- Spread mozzarella cheese in the bottom of the pie plate.
- Top with chopped spinach and cherry tomatoes.
- Pour egg mixture over the vegetables.
- Bake in preheated oven until quiche is set and lightly golden, about 30 minutes.
- Allow to cool before serving.
