Tomato & Spinach Quiche

Ingredients:

  • 4 eggs
  • 1/4 cup olive oil
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup chopped fresh spinach
  • 1/2 cup chopped cherry tomatoes

Instructions:

  1. Preheat oven to 190 degrees C (375 degrees F).
  2. In a bowl, whisk together eggs, olive oil, Parmesan cheese, garlic powder, oregano, basil, black pepper, and salt. Set aside.
  3. Grease a 9-inch pie plate with butter or cooking spray.
  4. Spread mozzarella cheese in the bottom of the pie plate.
  5. Top with chopped spinach and cherry tomatoes.
  6. Pour egg mixture over the vegetables.
  7. Bake in preheated oven until quiche is set and lightly golden, about 30 minutes.
  8. Allow to cool before serving.
